Peanut butter and jelly always reminds me of being a kid and my mom packing my lunches for school. I remember pulling my PB & J out of my paper lunch sack (along with my fruit roll up or cookies), and scarfing it down. As an adult, I still love the combination of peanut butter and jelly. With summer berries in full swing, and school for the kiddos wrapping up, it’s the perfect time for a new snack that also packs a punch with protein and healthy nutrients. This PB & J Yogurt Parfait makes the perfect breakfast (with a little granola added or whole wheat toast on the side), or is a great after school snack. It will fill you up, but won’t spoil your dinner.
Did I mention how gorgeous it looks? This version of the PB & J Yogurt Parfait has beets in the jam that add such a vibrant color. Here’s how you can make it yourself! First I made the Strawberry Beet Chia Jam. Then, all I had to do was take some plain yogurt and top it with peanut butter, jam, and fresh fruit. SO simple! It’s definitely a meal, or a snack, that you can feel good about eating yourself or making for your family and friends.
PB & J YOGURT PARFAIT
Ingredients
- ½ cup plain yogurt
- ⅛ cup Strawberry Beet Chia Jam *Recipe link above!
- ⅛ cup peanut butter Or use your favorite nut butter to customize
- ¼ cup chopped fresh fruit (you can use your favorite or what is in season near you!)
Instructions
